Preheat oven to 120 degrees
Draw a 22cm circle on a piece of baking paper
Grease a tray and stick the baking paper with the drawing side down
Grease the top of the baking paper and then dust with extra cornflour. NB this isn’t the cornflour in the ingredients list. Its just extra.
Place egg whites into stand mixer bowl. Insert the whisk and have your sugar and a tablespoon ready.
Turn the speed to 10 and add one tablespoon of sugar at a time. When you are done adding the sugar, turn the mixer off and test the mix. It should be stiff and shiny and when you feel a bit of it between your fingers it should be smooth. If you feel small grains of sugar, turn the machine back on and keep mixing and testing.
When you are happy that the mixture is smooth, add the vanilla essence, white vinegar and cornflour. Whisk until just combined. Use your judgement, but usually speed 5 for a few seconds does the trick.
Place mixture onto baking tray and use the circle as a guide. You want smooth sides. Be careful to hold your tray, I’ve ended up with pav on the floor in the past!
Put into the oven and bake for about 1.25 hours. Check it near the end. You want it to look like its hard on the outside, but you don’t want it browned.
When finished cooking, turn the oven off, but don’t open the door. Give it about 10mins, then use something to keep the door ajar about 5-10cm. I use a metal quarter cup measure. You want the oven to cool down very slowly so that the pav doesn’t crack. This may take more than an hour. Don’t rush it.
When the oven is cool, remove the pav. Now for the difficult part, removing it from the tray!
Place the serving plate at the edge of your kitchen bench or table.
Put the tray with the pav very close to the edge of the table with the baking paper hanging over the edge and under the serving tray.
Very carefully start to pull the baking paper down and slide the pav onto the serving tray. It can be a little daunting, but if you put enough cornflour on the baking paper, it should come off easily
Just before you are ready to serve, whip your cream and add your berries to the top.
